Coconut Strawberry Basil Sherbet
A sweet mixture of coconut, strawberries, and basil – with notes of mint and dark rum.

  1. Put your food processor (all but the motor base) into the freezer for about an hour before starting.
  2. Put all the ingredients into the food processor. 7/8 cups of sugar is easily measured as 1 cup minus 2 tablespoons. I used mostly granulated sugar with a bit of agave nectar
  3. Process until smooth. Taste it and if you think it needs more of something, add and process more.
  4. Put into a cold bowl with a lid and freeze for 20 minutes. After 20 minutes whisk the mixture vigorously and freeze for another 20-25 minutes. Repeat about 3 or 4 times. Doing this as it freezes incorporates air into the mixture.
  5. Let it freeze all the way and then enjoy!
